What I commonly do with these is make steak frites. Season with a good steak rub, render the fat cap at low heat, fire it over high heat for 75-90 seconds per side, depending on thickness, for rare-med rare, serve with cracked green pepper sauce or tarragon-mustard sauce.

Got the steaks and had about half the order.The steaks were delicious and tender I will be ordering more.
These steaks are quite good. Tender & juicy. But they aren't uniform cuts. Some are super thick & others are thinner. One had a layer of fat covering the entire steak. For the price though, I'd order them again.
been eating pichana for a long time these are chewy and tough. i miss Agridime
