Previously that compliment went to some ground Wagyu beef, but this was just as good, and maybe a little better. I think it's the high fat content. I put the entire 1 lb block on the grill and cook it like a thick steak using oak and hickory, keeping it rare so the fat doesn't drip away. And I eat it like a steak too; no patties, no buns, just a big tender medium rare oh so tender "steak". Spectacular, and oh so affordable compared to steak!
And I want the fat, do not be afraid of beef fat.
More grass fed, grass finished beef please.
