This is either my 5th or 6th brisket and have not been disappointed yet. I have never and will never cook my brisket in an oven. They go in my smoker with a mixture of hickory and oak and are smoked at 225 degrees for 7-8 hours. Always delicious.
This brisket is a family favorite. Pat rub with lots of salt all over the meat, wrap in foil and cook at 300 degrees for 5 hours, one hour with oven off, and then 5 minutes under the broiler. Just incredible. We live in a Texas high quality bbq restaurant area and my wife says “not smoky but just as good as any restaurant.”
This is the first time I have cooked a brisket from this company. Using my tried-and-true recipe that I have had for many years, I braised it in a 325-degree oven for over 4 hours. This usually results in a fall-apart tender roast, but not this time.
The meat texture was tough and rubbery, actually impossible to chew. It was not flat like a brisket usually is, but thick like a rump roast, with a large band of fat/gristle running through the middle (which accounted for about 1/3 of the total roast). The entire brisket was completely inedible and ended up in the trash.
The meats that we buy from this company have always been excellent, and we expected the same this time. Unfortunately, this brisket did not measure up to their usual standards. We asked the company to refund our money, but they failed to even respond to our request.

Order 10 - 3# briskets for Veterans Day gift baskets for veterans. Briskets received were very poor quality and unfit for our baskets.
