We did the cold pan sear on this flat iron, and it was delish! A bit more gristle than I would like to see (it was on other end of steak) but oveall a great steak!
I had never had a flat iron steak before my experience with American Grazed Beef. Tender - Lean - and flavorful. Of the 10 or so steaks I've had, all but one were top-notch. One was a little grizzly.
Several of these were a bit tough
